I heard that Arduino with a NRF 24 module can do a mouse jack feature where its takes over the receiver and wondering if it was possible in bruce

MouseJacking works with a limited number of devices (some Logitech and Microsoft), bringing its code to the ESP32 (in C++) is a big challenge, another point is that we do not have vulnerable devices to test the code, I understand that if this function appears, it will be in the more distant future.

Yes I understand btw code in c++ does exist i think but Im not sure Ive seen it online
