Specifically implement it for E = std::io::Error instead of E: std::fmt::Display, because otherwise, if we want to implement it for more specific error types, we get overlapping impls.

Since
run()s can now return aResult, let's use that here to de-duplicate some logic for pulling out the micromamba env name.
