Replace MinIORepoClient with more generic S3 repo client

Problem description

In February 2026 Minio, Inc stopped developing MinIO after it had previously stopped distributing compiled versions and accepting new features for their product. Since then it is not maintained anymore.

Proposed solution

Replace dependency io.minio:minio with e.g. software.amazon.awssdk:s3 and replace/rename MinioGraphRepoClient with/to e.g. S3GraphRepoClient and MinioRepoManagerTest with/to S3RepoManagerTest.
