Investigate whether any of the DB columns currently of type `varchar` would be better as `json`

Brief Description
Some varchar fields store json, and as @jarofgreen pointed out here #58 (comment) setting the column type to JSON may allow us to do more useful queries down the line. The task here is to investigate whether to do that.
