docs: fix broken star history charts - #381

The star history charts in the README and localized versions are currently broken because the underlying service is no longer reachable. Point them at a working provider so the charts render again.

The star history charts at the bottom of the README are broken and no longer render. This updates the chart links across the README and its localized versions so they display correctly again.
