docs: remove Gitter badge and references - #1715

The Gitter room is no longer used, so drop the badge from the README and the Sphinx landing page, along with the "ask questions in real time" bullets and the issue-template links pointing at that room. Assisted-by: claude-code:claude-opus-5[1m]
